Last night our volunteer garden crew met at the Palestine Community Garden for a little Garden Gumbo cooked over an open fire! We used fresh Okra, Potatoes, Tomatoes, Bok Choy, Banana Peppers, Onions, Green Beans, a Jalapeno Pepper, and Sweet Corn – all straight out of the garden. To this delicious mix we added a little shrimp, sausage, and cajun rice (not from the garden 🙂 ). Grilled Eggplant w/Basil and Cantaloupe (also from the garden) was our side dish and dessert. What a delicious way to celebrate God’s Blessings on our garden!
